2 medium garlic cloves, finely minced
2 tablespoon(s) Unsalated Butter
2 Italian bread, slices
12 large shrimp, rinsed, peeled and deveined
1/4 cup(s) flour
3 tablespoon(s) Unsalated Butter
1 tablespoon(s) olive oil, extra virgin
1 cup(s) white wine
1 ounce(s) lemon juice
5 tablespoon(s) Unsalated Butter, cut into 1 Tbs chunks, cold
1/2 medium tomato, cut into medium dice
1/4 cup(s) basil, fresh, cut chiffonade

Directions:
Garlic Toast
1) Preheat broiler.
2) Saute garlic in butter for 2 minutes.
3) Coat bread in garlic butter and set aside on a platter.
Shrimp
1) Dredge shrimp in flour and shake off excess.
2) Heat 3 Tbs of butter and oil in a saute pan, over medium heat.
3) Saute shrimp for 3 to 5 minutes until shrimp is cooked though.
4) Remove from pan and pour out excess butter.
5) Return pan and deglaze with wine for 2 to 3 minutes. Add lemon juice.
6) Reduce liquid to 1/2 which should take approximately 3 minutes.
7) Stir in 3 cold butter chunks. Add more chunks 1 at a time until sauce becomes emulsified.
8) The sauce should not be thick but coat the back of a spoon.
9) Add tomato and basil.
10) Return the shrimp to the pan for 30 seconds.
11) To plate, put the garlic toast on a plate, set shrimp on top and then pour sauce over the shrimp.

WOW! I'm on the next plane if this is any example of the restaurant named after the chef. I made it last night for my husband and myself and he said, "You better blog how much we loved the dish!"

Re: Mahi Mahi Quesadillas
I stumbled upon this website on my search for mahi mahi quesadillas. This recipe was a decent starting point but I made a few changes. Didn't have white wine so I used tequila diluted with a little water instead. Wanted something besides just fish meat in the quesadilla so I added chopped sauteed pineapple, zucchini, and cilantro. Assembled quesadillas on a sheet pan and broiled them in the oven for a couple of minutes on each side. Delish!
